This breakfast bowl is an homage to the Farmhouse breakfast bowl from First Watch.
My friend and I enjoyed this breakfast a lot pre- Covid19.
So last Saturday, it was my turn to make breakfast and there were two potatoes on the counter that needed to be used up. So I made this recipe up on the spot, I did not however have bacon. I know what’s up with that. But you can easily add bacon if you like.

Not the Farmhouse Breakfast Bowl
- Cast Iron Skillet, Frying Pan, med mixing bowl, whisk or fork
- 2 medium Potatos
- 1/2 Onion
- 1/2 Bell Pepper Any collor will work
- 8 Large Eggs
- 1/2 cup Shredded Cheese
- 1 tbsp Olive Oil
- Southwest Seasoning Pampered Chef, but anythings seasoning will do.
- 2 Tomatoes
- Heat the oil in the pan, chop the bell pepper into pieces, slice the onion and peel and cut the potatoes. Once the oil is hot, add the potatoes first, cause they take the longest to cook. While the potatos are cooking, crack the eggs, season them and whisk together. Stir the potatoes every so often. After 5-8 mins add the bell peppers and onions, keep stiring them until the Onions start to brown over medium heat and the potatoes are soft. Now add the eggs. Cook the eggs thouroughly and then add the cheese and mix into the mixture. Serve in your favorite bowl and garnish with the slices of half a tomato. You can add Avocado as well.
